Ahhhh… How good and how necessary is that first cup of coffee! And second, and third too!! But really… It amazes me how much that first cup o’coffee, in a cool mug, nestled snug and warm in your hands can change your outlook on the day! I don’t know about you, but I am NOT a morning person. My first thoughts upon waking are not the positive and happy, can’t wait to jump outta bed kind… but more along the lines of major denial that I have to actually get up and begin the hectic routine waiting for me downstairs, followed by sadness that there are soooo many more hours before it will be time to go back to bed again, and then anger that my nights sleep seemed to have gone by wayyyy too fast! But THEN, there is that sweet thought of drinking coffee that lures me out of this depressed state, and gives me the willpower to face the morning, and all of the chaos, dirty dishes, whining, shuttling, cooking and chores that it brings!
On the weekends, Coffee feels recreational and decadent, something to be savored and enjoyed! But on weekdays, drinking coffee is more like a medicinal thing for me! I literally cannot function, at least like a kind and loving human, without it! Typically I am a drinking coffee straight up black kinda gal, but a few mornings out of the week, when I am feeling either ambitious, or want a little SOMETHING extra to make my morning feel a little extra special, I will whip up a Vanilla Almond Milk Cappuccino. It’s sorrrt of a cappuccino actually… I do use espresso, but I brew it in a french press like I would regular coffee, and I also add milk AND foam as opposed to just foam in a “real” cappuccino. I guess we can call it more of a Cappulatte or Lattuccino…??? Anyway, it’s good and it gets the job done, and it makes me feel classy amidst the dirty diapers and dishes!
The French Press is my favorite way to brew coffee at home! It makes the smoothest, richest cup of joe in my opinion, and is so easy and quick! If you have not tried French Press coffee, I would highly recommend trying it. Honestly, I would drink 2 day old gas station coffee if that’s what was available, but when given the choice, French Press is seriously THE way to go! I use a Bodum French Press, which has lasted me years, and any kind of coffee beans can be used, they just need to be ground extra course. Depending on how much coffee you are making, just add the proportionate amount of almost boiling water to your grinds in the french press, put the lid on and wait 5 minutes. And wuahlaahh… The yummiest cup of coffee is ready for sipping.
On my “I wanna be a little fancy” days that I cappuccino-fy my coffee, I simply froth up some Unsweetened Vanilla Almond Milk until it is super thick and velvety, squeeze a tiny squirt of Vanilla Pure Via Stevia into my cup of espresso, and then pour in the milk and spoon on the foam. To top it all off, it should OBVIOUSLY be lightly dusted (or not so lightly) with cinnamon!
This is seriously so DELISH and just what the doctor ordered! Now all that’s left to do is sit back, relax and enjoy right?! Fat chance! More than likely I will be dumping my little treat into my fave to-go cup and darting out the door because I am late to drop off the kids at school! Luckily I am obsessed with my new-ish to-go coffee mug, and can still feel classy and cool while the baby screams in the car!
Vanilla Almond Milk Lattuccino
1 cup espresso or dark roast coffee
1/2 cup Unsweetened Vanilla Almond Milk
1/2 t Pure Via Vanilla Sweetener, or Vanilla flavored syrup
Brew coffee or espresso. If using a french press, you can find detailed instructions HERE. Pour milk into a cup, jar or milk frother, and froth until thick. I use THIS Capresso Milk Frother which is amazing, but if you don’t have any frothing tools, you can do THIS. Add about 1/2 teaspoon of vanilla to the hot coffee, pour warm milk into the coffee, and spoon thick foam onto the top. Sprinkle with cinnamon. Enjoy 🙂
